LACANCHE hob extensions

LACANCHE cookers offer extensive customisation options. The hob extensions are a fundamental part of this. Hob extensions are possible with cookers from 110 cm width. Here is an overview of the various options.

Gas burner 5kW

1 gas burner with 5 kW

The 5 kW gas burner can be selected as a supplement to the main hob.

 Plancha/Teppan Yaki

Teppan Yaki/ Plancha

The Teppan Yaki consists of an 8 mm thick steel plate, which heats up for the cooking process. The steel plate is hard chrome-plated to create a smooth surface and to protect against rust. It takes some time for the steel plate to heat up, but the heat remains very constant afterwards, as the solid steel retains the temperature much better than any pan.

Thanks to its smooth surface, the plancha is perfect for cooking finely chopped vegetables, thin pieces of meat or fish. Simple dishes such as potato pancakes, blinis, omelettes or scallops can also be quickly prepared on it. The various ingredients can be easily arranged, moved, fried and mixed if necessary.

With Teppan Yaki, you can cook faster, healthier and, above all, with less effort. It allows you to cook different foods one after the other without having to change pans. All you need to do is briefly clean the plate in between. Thanks to the short cooking times, the food remains juicy and does not dry out. The nutrients and vitamins are also better preserved.

The temperature regulator makes it possible to set precise temperatures. This also makes the plancha suitable for simmering or keeping food warm, as pots or pans can be placed on it without any problems.

The chrome coating can be damaged if used incorrectly. It is therefore advisable to use wooden crockery or metal crockery with rounded corners. Knives must not be used under any circumstances.

The Teppan Yaki has a permanently installed cover as standard, which protects the surface from scratches. When the Teppan Yaki is not in use, the cover can be used as a work surface.

The plancha is compatible with all LACANCHE models from 110cm width as an option.

Steamer/Baine Marie

Steamer/Bain-Marie

The bain-marie was originally developed by LACANCHE for the in-house catering line in the professional sector. It is made entirely from hygienic chrome steel.

The automatic filling function maintains the water level and ensures that the water temperature remains constant by constantly topping up small amounts of water (0.5dl). This is measured by a sensor. A very accurate thermostat simultaneously monitors the water temperature. Temperatures between 30 and 100 °C can be selected.

The bain-marie offers the following cooking methods:

Steam (steamer)
Enables even, gentle cooking with high humidity. Ideal for preparing vegetables, fish or meat.

Water bath (bain-marie)
Enables very precise temperature control. Perfect for cooking delicate foods gently.

Boiling water
Enables cooking like in a pot (e.g. pasta) and also vacuum cooking and poaching.

There are many different accessories available for the bain-marie as options for the corresponding cooking methods.

The bain-marie is supplied as standard with a stainless steel GN 2/3 container with lid, which is ideal for steam cooking.

Deep fryer

Deep fryer

Only a really powerful deep fryer will achieve optimum frying results. The quality depends on the ratio between the capacity and the power.

With the LACANCHE deep fryer, which has a capacity of five litres and a total output of 3kW, excellent results are achieved thanks to the short frying time.

The deep fryer is equipped with a cold zone, a thermostat and an emulsion zone and therefore offers a high degree of safety.

The functional part is equipped with the heating and regulating element as well as safety components and is removable.

The temperature can be set up to 200 °C. The timer can be set to a maximum of 15 minutes.

The corners of the oil pan are rounded and there is an oil drain tap underneath, which makes cleaning much easier.

The deep fryer is compatible with the following models:

Chassagne, Chambertin, Cluny D 140cm, Cluny G 140cm, Fontenay, Citeaux, Sully D 180cm, Sully G 180cm, Sully 2200

The deep fryer can only be placed above a storage cabinet without a heating function.

The drain valve is located in the storage cabinet below.

Grill

Gas barbecue

The grill is made of enamelled chrome steel and can be adjusted in height (3 levels). The V-shaped grooves allow any fat or liquids that run off to drain into the collecting groove at the front. This prevents flames during the cooking process. There are lava stones above the 4 kW gas burner. They can reach temperatures of over 300 °C - caution is advised.

The gas grill is much more precise than a charcoal grill. The temperature is easy to regulate and the lava stones underneath distribute the heat very evenly. However, the temperature setting only adjusts very slowly as the lava stones store a lot of heat.

The gas barbecue has an electric ignition and a safety valve on the gas burner.
